Sesame Oil
3 cloves garlic, minced
5 green onions, chopped
1 inch cube fresh ginger, peeled and grated
½ bunch thin asparagus, trimmed and cut diagonally into inch slices
1 cup raw cashews, coarsely chopped
4 big handfuls organic baby spinach
1 cup broccoli florets
Grated zest and juice of 1 lime
2 tbsp. tamari or Bragg’s
1 tsp agave syrup or honey
1 small handful fresh mint, slivered
1 small handful fresh basil, slivered
Sea salt to taste
Prep your veggies first. Splash sesame oil in big pan at medium heat and if you are using tofu add that first and cook until golden. Remove from the pan and set aside. Splash more sesame oil into the pan and add garlic, ginger, green onions, asparagus and broccoli. Stir for 1-2 minutes then add cashews and spinach and stir for another minute or until spinach wilts. Stir in lime zest, lime juice, agave or honey and tamari sauce. Cook for another minute, stirring constantly. Remove from heat and stir in mint and basil. Season with salt to taste.
